Scones

A friend of mine posted about making Scones the other day and I started craving them like crazy.  They are rather inexpensive to make and delicious!
I shouted out on Twitter and asked for a recipe for them and was sent on over to The Pioneer Woman.  She is an amazing cook!
Recognize this bowl?  I won it and two others over at Trish's blog quite sometime ago and love them!
I tweaked the recipe a bit adding mixed berries, almond, and honey instead of sugar.
Mine are not as pretty as The Pioneer Woman's, but I'm sure they are just as tasty!

Here's the recipe I came up with (remember, I tweaked the original)...

Scones...
3 Cups flour
1/3 Cup honey
5 tsp baking powder
1/2 tsp cinnamon
2 sticks of cold butter cut in scquares
3/4 Cup heavy cream
1 egg
8 oz mixed berries
1 tsp almond
Sprinkled in some flax seed

Topping...
1/2 C honey
1 tsp cinnamon
1 1/2 tsp heavy cream

Preheat oven to 350 degrees.

In large bowl- mix flour, honey, cinnamon, baking powder.
Cut in butter.
Mix in berries.
In small bowl- mix cream, egg, almond, and add to large bowl and mix.

Form into a circle or rectangle on a counter sprinkled with flour (so it doesn't stick to the counter)
Mix topping ingredients together and press onto circle or rectangle of dough.
Slice into circles or triangles and place on cookie sheet or stone.

Bake 25 minutes or until a toothpick comes out clean @ 350 degrees.
Let cool.  Enjoy.  Store in fridge.  Warm in microwave.  Enjoy again.
