Chicken and Couscous

Found in Women’s Day

Brown chicken breasts in a Tbsp of olive oil
Salt and Pepper to taste

Make couscous with Pine nuts according to box

Salsa…
11/2 C diced mango
2 Tbsp each…
Cilantro
Jalapeno (I bought the canned ones)
Red onion
Mix all together

To plate
Put down a bed of couscous
Lay chicken on top
Top with Salsa
Baby greens on the side

Total WW points….6-8 (depending on your size of chicken breast (2pts/4 oz))
