Banana Muffins


About a week ago, I made these amazing 2 point (weight watchers) Banana Muffins.  They were a hit at my house.  Here is the long awaited recipe...

1/2 tsp salt
1 tsp vanilla
1 1/2 tsp flour
3/4 c white sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
2 egg whites
1/4 cup applesauce
1/4 cup flax seed (optional, adds good fiber and Omegas)
4 mashed bananas (sorry, I forgot the most obvious ingredient)
Top with a bit of brown sugar

I mix all dry ingredients and then add all others.  Pour into muffin tins, sprinkle with brown sugar and bake for 18-20 min at 350 degrees.  The entire recipe is 29 points.
