Potato Soup
All because of this bottle of Half & Half, I needed to come with a recipe. I paid a whole .29 for the lonely bottle and didn’t want to waste all my coupon clipping and price matching by throwing it away due to expiration (which was today).
I’ve made potato soup before, but with cream cheese rather then plain cream, so a bit of tweaking and success was made!
I started by chopping up 8 small potatoes (Aaron prefers skin on) and adding them to 2 cans of chicken broth. I then added salt and pepper to taste, 2 Tbsp of butter, 2 garlic cloves, chopped purple onion to taste (not big onion fans, but like the flavor), and 2 Tbsp of flour. I then boiled this concoction until my potatoes were soft enough to eat. While my soup boiled, I enjoyed the scene outside my kitchen window.
Then, once the potatoes were ready, I added the lonely .29 bottle of Half and Half. And continued boiling for about 2 minutes or so (enough to heat thoroughly). And then, it was ready! Mmmmm…good.
